Pumpkin puree has uses far beyond pie, including pasta sauce, chili, brown rice pudding and spice cake. It’s a savory and comforting addition to seasonal dish so don’t put canned pumpkin in a corner.  Instead, here are other ways to cook with the canned squash, as a sauce for pasta, stirred into chili and mixed into a spice cake.

Lightbulb Moment: There is a theme this week … Ricochets.  A Ricochet occurs when an ingredient jumps out of its comfort zone.  Here we have pumpkin being used in ways other than in a pie, which is something the food industry is aware of, but doesn’t always practice.  Don’t fall into the trap of pigeonholing an ingredient which has the potential to shine everywhere.
