A startup called Smallhold puts minifarms inside restaurants and retail stores to allow businesses to grow their own mushrooms on site. The farms can produce up to 120 pounds of mushrooms weekly, and in the future, the company aims to expand with minifarms growing other produce. The mini-farms — which have been shrunk to the size of a shelving unit — produce between 20 and 120 pounds of mushrooms per week. They literally have the technology to farm inside of a grocery store.
